Ingredients:

  • 1 kg beef brisket
  • 2 onions, peeled and halved
  • 1 piece of ginger (about 3 inches), sliced
  • 2 cinnamon sticks
  • 3 star anise
  • 4 cloves
  • 1 tablespoon coriander seeds
  • 1 tablespoon fennel seeds
  • 4-5 liters water
  • 1 tablespoon salt, or to taste
  • 1 tablespoon sugar
  • 1 kg dried pho noodles
  • Fresh herbs (Thai basil, cilantro, sawtooth herb)
  • Bean sprouts
  • Lime wedges
  • Hoisin sauce
  • Sriracha sauce

Instructions:

  1. Prepare the Brisket:
    • Place the beef brisket in a large pot and cover with cold water. Bring to a boil and cook for about 5 minutes. Drain and rinse the brisket under cold water to remove any impurities.
  2. Broth Base:
    • In a dry pan, toast the cinnamon sticks, star anise, cloves, coriander seeds, and fennel seeds over medium heat until fragrant, about 3-4 minutes. Add these spices to the pot with the brisket.
    • Add the halved onions, sliced ginger, salt, and sugar to the pot. Pour in 4-5 liters of water (enough to cover the brisket and spices).
    • Bring to a boil over high heat. Skim off any foam that rises to the top. Reduce heat to low, cover, and simmer gently for at least 2 hours, or until the brisket is tender.
  3. Prepare the Noodles:
    • While the brisket is simmering, cook the dried pho noodles according to the package instructions. Drain and rinse under cold water.
  4. Assembly:
    • Once the brisket is tender, remove it from the pot and allow it to cool slightly. Slice the brisket thinly against the grain.
    • Strain the broth through a fine mesh sieve. Discard the solids.
    • To serve, divide the cooked noodles among serving bowls. Top with slices of the cooked brisket.
    • Ladle the hot broth over the noodles and brisket. The broth should be piping hot to cook the brisket slices further.
    • Serve immediately with fresh herbs (Thai basil, cilantro, sawtooth herb), bean sprouts, lime wedges, hoisin sauce, and sriracha sauce on the side for diners to customize their bowls.
