Instructions:
- Prepare the Brisket:
- Place the beef brisket in a large pot and cover with cold water. Bring to a boil and cook for about 5 minutes. Drain and rinse the brisket under cold water to remove any impurities.
- Broth Base:
- In a dry pan, toast the cinnamon sticks, star anise, cloves, coriander seeds, and fennel seeds over medium heat until fragrant, about 3-4 minutes. Add these spices to the pot with the brisket.
- Add the halved onions, sliced ginger, salt, and sugar to the pot. Pour in 4-5 liters of water (enough to cover the brisket and spices).
- Bring to a boil over high heat. Skim off any foam that rises to the top. Reduce heat to low, cover, and simmer gently for at least 2 hours, or until the brisket is tender.
- Prepare the Noodles:
- While the brisket is simmering, cook the dried pho noodles according to the package instructions. Drain and rinse under cold water.
- Assembly:
- Once the brisket is tender, remove it from the pot and allow it to cool slightly. Slice the brisket thinly against the grain.
- Strain the broth through a fine mesh sieve. Discard the solids.
- To serve, divide the cooked noodles among serving bowls. Top with slices of the cooked brisket.
- Ladle the hot broth over the noodles and brisket. The broth should be piping hot to cook the brisket slices further.
