Ingredients:
- 500g of dried pho noodles (or fresh if preferred)
- 400g of rare beef
- 200g of beef meatballs
- 1 purple onion
- 3 cloves of garlic
- 1 carrot
- Fresh ginger
- Scallions, cilantro, and other herbs
- Salt, sugar, fish sauce, and black pepper
Instructions:
- Soak the dried pho noodles in water for about an hour until they are soft.
- Slice the rare beef into thin pieces.
- Peel and chop the purple onion and garlic.
- Cut the carrot into thin slices.
- Peel and slice the fresh ginger.
- Bring a pot of water to a boil and add the pho noodles. Cook for about 3 minutes, then remove the noodles and drain them.
- Put the rare beef in the pot and cook for 1-2 minutes until it’s cooked through.
- Remove the beef from the pot and place it in a bowl.
- Heat some cooking oil in a pan and stir-fry the chopped onion and garlic until fragrant.
- Add the carrot and ginger to the pan and stir-fry together.
- Bring another pot of water to a boil, then add the beef meatballs and cook for about 5 minutes. If you prefer crispy meatballs, you can fry them before cooking.
- Season the broth with salt, sugar, fish sauce, and black pepper to taste.
- When the meatballs are cooked, add the cooked pho noodles and rare beef to the pot. Add the herbs and scallions to the pot and turn off the heat.
- Serve the pho in bowls with the rare beef, meatballs, and herbs on top.
