Ingredients:

  • 8 cups chicken or vegetable broth
  • 1 lb shrimp, peeled and deveined
  • 8 oz rice noodles
  • 1 onion, thinly sliced
  • 2 carrots, julienned
  • 2 cups bean sprouts
  • 1 red bell pepper, thinly sliced
  • 4 green onions, thinly sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup basil leaves
  • 1/4 cup mint leaves
  • 2 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1-inch piece ginger, sliced
  • 1 cinnamon stick
  • 2 star anise
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger, and sauté until fragrant, about 2 minutes.
